Soft, Easy Breadmaker Bread (vegan, pareve*, low-calorie)
I grew up in Utah, and anyone else who did knows that the real “wonder bread” is Grandma Sycamore bread. It’s soft, chewy, squishy, and delicious. It was one of my most missed Utah foods when I moved away (and I may have travelled home more than once with some loaves stowed away in my luggage). I needed to somehow bring back this soft, easy Breakmaker Bread into my life.

It set the bar high, as far as bread goes, and I’ve sought out something similar ever since.

Cue last year, when my mom gave us a bread machine! Ours is a brushed-silver Cuisineart Automatic Bread machine. As far as kitchen appliances go, I love it, my mom used to make the best kaiser buns when I was a kid, I wanted one ever since! It’s so easy to literally set-it and forget it. You just dump in the ingredients in, and you have delicious preservative-free, vegan, non-sodium laden bread made with ingredients you can pronounce.

This bread’s crust is not quite Grandma Sycamore level squishy, but the flavor is pretty dead-on. I think if I used bleached flour and omitted the vital wheat gluten it would probably turn out even closer, but I don’t mind a little density in my bread, and I prefer the healthier Ultragrain flour.

Soft, Easy Breadmaker Bread Recipe

This bread is so easy! To get started, pour 1 1/3 cups of water at about 105-115 degrees into your machine.

Then add 2 ½ tablespoons of sugar and stir to dissolve. I use raw sugar, so you have to stir it around a bit to get it from sinking to the bottom.

To that, I add 2 ½ tablespoons of yeast
I let it rest for 10 minutes. That right there is the “trick”. It gives the yeast time to get all bubbly and will make the bread fluffy and delicious!
After that, I add my ingredients in the order of: 2 tablespoons of vital wheat gluten (you can skip if you use white flour), 4 cups whole grain or Ultragrain unbleached flour, ½ cup of olive oil and 1 Tablespoon of salt.
I press start, light color, 2 lb loaf, and use the “white bread setting”. That’s it. Awesome Granny Bread, with little effort. Three hours later my bread comes out perfect, soft and amazing every time!
